  • 1/2 cup thick caramel sauce
  • Flaky sea salt (for sprinkling)

Instructions

  1. Prepare the cheesecake filling by mixing softened cream cheese, granulated sugar, and vanilla extract until smooth. Transfer to a piping bag and chill.
  2. For the cookie dough, whisk flour, baking soda, baking powder, and salt in one bowl. In another bowl, beat softened butter with both sugars until fluffy. Add egg and vanilla; mix well. Combine dry ingredients until just mixed.
  3. Scoop dough into discs, place a teaspoon of cheesecake filling in the center, seal the dough around it, and shape into balls. Chill for 20–30 minutes.
  4. Preheat oven to 350°F (175°C). Bake cookies on lined sheets for 10–12 minutes until edges are golden. Cool slightly before transferring to wire racks.
  5. Once cool, pipe cheesecake filling on top of each cookie, drizzle with caramel sauce, and sprinkle with flaky sea salt.
