  • 1 ½ pounds chicken thighs, cut into 1-inch pieces
  • 3 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 6 cloves garlic, minced
  • 1 onion, diced
  • 3 carrots, peeled and sliced
  • 2 large potatoes, cut into cubes
  • 3 cups chicken broth
  • ½ cup milk
  • 1 cup frozen green peas

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sear chicken pieces for about 4-5 minutes until browned.
  2. Transfer the seared chicken to the slow cooker. Add flour, thyme, rosemary, garlic, onion, carrots, potatoes, and chicken broth.
  3. Stir to combine and cook on low for 7-8 hours or high for 3-4 hours until tender.
  4. In the last 10-15 minutes of cooking, stir in frozen peas and milk until warmed through.
  5. Adjust seasoning as needed before serving hot.
