  • 3 cloves garlic, minced
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • ½ cup milk
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 cup frozen corn
  • 4 cups sliced potatoes (about 1.5 pounds)
  • 1 cup shredded cheese (cheddar or your choice)

Instructions

  1. In a skillet over medium heat, cook ground beef with chopped onions and minced garlic until browned; drain excess fat.
  2. Transfer the mixture to a slow cooker and add cream of mushroom soup, milk, kidney beans, diced tomatoes, corn, chili powder, salt, and pepper; stir until combined.
  3. Layer sliced potatoes on top of the mixture.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours until potatoes are tender.
  5. In the last 20 minutes of cooking, sprinkle cheese over the top; cover until melted.
