  • 1 tsp ground cinnamon
  • ½ tsp ground cloves
  • ½ tsp ground nutmeg
  • 1 tsp baking soda
  • ¼ tsp salt
  • ¾ cup (170g) unsalted butter, softened
  • 1 cup (200g) brown sugar, packed
  • 1 large egg
  • ¼ cup (60ml) molasses
  • 2 tsp vanilla extract
  • ½ cup (60g) powdered sugar (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
  3. In another bowl, cream together softened butter and brown sugar until fluffy.
  4. Add egg and molasses to the butter mixture; mix until combined.
  5. Gradually stir dry ingredients into the wet mixture until just combined.
  6. Roll dough into balls about 1 inch in diameter and coat each ball in powdered sugar.
  7. Place on a parchment-lined baking sheet with space between each.
  8. Bake for 10 minutes or until edges are firm yet centers remain soft.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.
