- ¼ cup lime juice
- ½ tsp chili powder
- 3 tbsp olive oil
- 4 large tortillas
- 1 small red bell pepper
- 1 jalapeño
- ¾ cup corn kernels
- 1 cup black beans
- ¼ cup cotija cheese
- ⅓ cup sour cream
- Fresh cilantro for garnish
Instructions
- Marinate the diced chicken in olive oil, lime juice, chili powder, and spices for at least 15 minutes.
- Cook rice according to package instructions.
- In a skillet, sauté the marinated chicken over medium heat until fully cooked (about 12–15 minutes). Set aside.
- Sauté chopped peppers and onions in the same skillet for about 8 minutes, adding garlic towards the end.
- Warm tortillas and layer with rice, chicken, sautéed veggies, beans, corn, cheese, and drizzle with sauce.
- Wrap tightly and serve immediately.
