Ingredients

  • 0.75 lb boneless, skinless chicken breasts
  • ¼ cup lime juice
  • ½ tsp chili powder
  • 3 tbsp olive oil
  • 4 large tortillas
  • 1 small red bell pepper
  • 1 jalapeño
  • ¾ cup corn kernels
  • 1 cup black beans
  • ¼ cup cotija cheese
  • ⅓ cup sour cream
  • Fresh cilantro for garnish

Instructions

  1. Marinate the diced chicken in olive oil, lime juice, chili powder, and spices for at least 15 minutes.
  2. Cook rice according to package instructions.
  3. In a skillet, sauté the marinated chicken over medium heat until fully cooked (about 12–15 minutes). Set aside.
  4. Sauté chopped peppers and onions in the same skillet for about 8 minutes, adding garlic towards the end.
  5. Warm tortillas and layer with rice, chicken, sautéed veggies, beans, corn, cheese, and drizzle with sauce.
  6. Wrap tightly and serve immediately.
