  2. Perform stretch and folds four times over one hour, allowing 20-minute rests between each set.
  3. Cover the dough and let it rise at room temperature for 3–4 hours until nearly doubled.
  4. Shape the dough into a tight ball and place it seam-side up in a floured basket. Let it proof for another 2 hours.
  5. Preheat your oven to 460°F (238°C) with a dutch oven inside.
  6. Score the dough and bake covered for 30 minutes, then uncover and bake for an additional 10 minutes until golden brown.
  7. Cool on a rack for at least one hour before slicing.
