- 290 grams water
- 160 grams sourdough starter
- 8 grams salt
Instructions
- In a large mixing bowl, combine water, sourdough starter, and salt. Stir well, then add flour and mix until no dry flour remains. Cover and let rest for 30 minutes.
- Perform stretch and folds: Grab an edge of the dough, stretch it up, and fold it under the opposite side. Rotate the bowl and repeat four times. Cover and rest for 20 minutes; repeat this process three more times within an hour.
- Let the dough rise at room temperature for 3-4 hours until nearly doubled.
- Shape the dough into a ball on a floured surface by pinching opposite ends together.
- Place seam-side up in a floured banneton basket; cover and proof for another 2 hours.
- Preheat your oven to 460°F (238°C) with the Dutch oven inside.
- Once proofed, transfer dough onto parchment paper, score the top, and bake in the hot Dutch oven for 30 minutes covered, then remove the lid and bake for another 10 minutes until golden brown.
- Cool on a rack before slicing.
