- 1 block extra firm tofu
- 1 can black beans
- 1 batch cilantro lime rice
- 1 red pepper
- 1 orange pepper
- 1 avocado
- Spicy tahini dressing
Instructions
- Preheat your oven to 400°F (200°C).
- Press the tofu for 5–10 minutes to remove excess moisture.
- Prepare the spice mixture with coconut sugar, corn starch, paprika, garlic powder, onion powder, chili powder, and salt.
- Cube the pressed tofu and mix with sriracha and olive oil, then coat with the spice mixture.
- Place seasoned tofu on a baking sheet lined with parchment paper.
- Chop peppers into strips and drizzle with olive oil; add to the baking sheet.
- Bake for 20 minutes, brush tofu with remaining sriracha mixture, and continue baking for another 10–15 minutes until crispy.
- Assemble bowls with rice, black beans, roasted peppers, crispy tofu, sliced avocado, and spicy tahini dressing.
