  • 2 tablespoons vegetable oil

  • 1 red bell pepper
  • 2 teaspoons ground cumin
  • 1 can (14 ounces) diced tomatoes
  • 1 can (14 ounces) coconut milk
  • 1/2 cup chicken broth
  • 1 bay leaf
  • Salt and black pepper, to taste
  • Fresh cilantro leaves, for garnish
  • Cooked rice for serving

Instructions

  1. Marinate chicken thighs in garlic, paprika, cayenne pepper, salt, and black pepper for at least 30 minutes.
  2. Heat vegetable oil in a large pan. Sauté onion and red bell pepper until soft.
  3. Stir in cumin, coriander, and smoked paprika; cook for an additional minute.
  4. Add diced tomatoes, coconut milk, chicken broth, bay leaf, salt, and black pepper; bring to a simmer.
  5. Add marinated chicken; simmer for about 20 minutes until cooked through.
  6. Remove bay leaf before serving over cooked rice and garnish with fresh cilantro.
