  • 1/8 teaspoon red pepper flakes
  • 11/2 cups green split peas, rinsed
  • 8 cups reduced-sodium chicken broth
  • 1 meaty ham bone (or ham hocks)

Instructions

  1. In a large heavy-bottomed pot, heat olive oil over medium heat. Add diced onion, carrot, celery, salt, and pepper; cook until softened (about 5–8 minutes). Stir in minced garlic and seasonings, cooking for an additional minute.
  2. Add rinsed split peas, ham bone, bay leaves, and chicken broth. Bring to a boil then reduce heat to low; simmer uncovered for 60–90 minutes until peas are tender.
  3. Remove the ham bone, shred any meat back into the soup, and discard bones and bay leaves. For a creamier texture, blend a portion of the soup before mixing it back in.
  4. Serve hot with crusty bread or garnished with fresh herbs.
