  • 1 lb. lean ground beef
  • 1 tablespoon olive oil
  • 1/2 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cans (14.5 oz.) diced tomatoes
  • 1 can (15 oz.) tomato sauce
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 cups cooked long grain white rice
  • Salt and pepper to taste

Instructions

  1. In a Dutch oven over medium heat, brown the ground beef until fully cooked; drain excess grease.
  2. Add olive oil to the pot and sauté diced onions and bell peppers for about 5 minutes; add minced garlic and sauté for an additional 30 seconds.
  3. Stir in the cooked beef along with diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, salt, and pepper.
  4. Bring to a boil; reduce heat and let simmer for about 15–20 minutes.
  5. Stir in cooked rice just before serving; garnish with parsley if desired.
