  • 1 and 2/3 cup heavy cream (chilled)
  • about 1/3 cup powdered sugar (to taste)
  • 1 teaspoon vanilla
  • ½ cup unsalted butter (softened)
  • 8 oz. cream cheese (softened)
  • 1 cup powdered sugar
  • 3 cups graham cracker crumbs
  • ½ cup + 2 tablespoons unsalted butter (melted)
  • ¼ cup strawberry jam
  • 2 (3 oz.) packages of berry blue Jello (or other flavor to your taste)
  • 1 and 1/4 cup boiling water
  • 2/3 cup diced fresh strawberries
  • 2 cups blueberry pie filling
  • 1 cup of canned crushed pineapple (drained from juice)
  • Fresh strawberries (halved)
  • Fresh blueberries
  • 1 cup of whipped cream
  • 2 ½ cups whipped cream
  • ¼ cup chocolate chips

Instructions

  1. Prepare the crust by mixing graham cracker crumbs, melted butter, and strawberry jam. Press into a greased 9×13 inch baking dish.
  2. For the cream layer, beat softened cream cheese with powdered sugar and vanilla until smooth. Whip the heavy cream separately until stiff peaks form, then fold into the cream cheese mixture.
  3. Spread half of the cream mixture over the crust, add diced strawberries, and top with blueberry pie filling.
  4. Dissolve Jello in boiling water as per package instructions. Cool slightly before pouring over layered ingredients.
  5. Refrigerate until set, then add remaining cream mixture on top followed by whipped cream and fresh berries for decoration.
  6. Chill for at least one hour before serving.
