Ingredients

- 1 1/2 cups uncooked millet
- 1/3 – 1/2 cup sliced black olives
- 1/2 cup capers
- 1/2 cucumber, diced
- 2 spring onions, sliced
- 1 small red pepper, diced
- juice of 1 lemon
- 2 tsp dijon mustard
- 2 tbsp apple cider vinegar
- optional maple syrup
- salt
- black pepper
Instructions
- Rinse millet under cold water, then boil in 4 1/2 cups of water for about 20 minutes until tender. Drain and cool.
- While millet cooks, prepare vegetables by dicing cucumber and red pepper, slicing spring onions, and measuring olives and capers.
- In a bowl, mix dressing ingredients: lemon juice, dijon mustard, apple cider vinegar, optional maple syrup, salt, and pepper.
- Combine warm millet with dressing and all prepared vegetables in a mixing bowl. Chill before serving.
