  • 3 Ancho chilies
  • 3 cups low-sodium chicken broth
  • 4 lbs boneless beef chuck
  • 1 extra-large yellow onion
  • 1 red bell pepper
  • 26 jalapeños (optional)
  • 4 garlic cloves
  • Spices: cumin, paprika, coriander, allspice, Mexican oregano, cocoa powder, tomato purée

Instructions

  1. Toast New Mexico and Ancho chilies in a large pot over medium heat for about 2 minutes per side until fragrant. Add chicken broth and bring to a boil, then let steep for 5–10 minutes. Blend until smooth.
  2. In the same pot, heat olive oil and sear seasoned beef chunks in batches until browned on all sides.
  3. Sauté chopped onion, bell pepper, and jalapeños (if using) until softened. Stir in minced garlic and spices; cook briefly.
  4. Mix in tomato purée and the blended chile mixture with seared beef. Simmer on low for 2–3 hours until beef is tender.
