Ingredients
- 4 New Mexico chilies
- 3 Ancho chilies
- 3 cups low-sodium chicken broth
- 4 lbs boneless beef chuck

- 1 red bell pepper
- 2–6 jalapeños (optional)
- 4 garlic cloves
- Spices: cumin, paprika, coriander, allspice, Mexican oregano, cocoa powder, tomato purée
Instructions
- Toast New Mexico and Ancho chilies in a large pot over medium heat for about 2 minutes per side until fragrant. Add chicken broth and bring to a boil, then let steep for 5–10 minutes. Blend until smooth.
- In the same pot, heat olive oil and sear seasoned beef chunks in batches until browned on all sides.
- Sauté chopped onion, bell pepper, and jalapeños (if using) until softened. Stir in minced garlic and spices; cook briefly.
- Mix in tomato purée and the blended chile mixture with seared beef. Simmer on low for 2–3 hours until beef is tender.
- Season to taste and serve hot with desired toppings.
