- 1 green bell pepper, diced
- 4 cloves garlic, minced
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1 teaspoon smoked paprika
- 1 can (6 ounces) tomato paste
- 1 can (28 ounces) diced fire-roasted tomatoes, undrained
- 2 cups low sodium beef broth (or 1 cup beer + 1 cup beef broth)
- 1 bay leaf
Instructions
- Heat olive oil in a Dutch oven over medium-high heat.
- Brown the ground beef, seasoning with salt and pepper, cooking until no longer pink.
- Add diced onion, bell pepper, and minced garlic; cook until softened.
- Stir in chili powder, cumin, oregano, and smoked paprika.
- Mix in tomato paste; cook for 3 minutes.
- Pour in diced tomatoes and beef broth; scrape bottom of pot to combine.
- Add bay leaf; bring to simmer and cook for 25-30 minutes.
- Discard the bay leaf; adjust seasoning as needed before serving.
