  • 1 yellow onion, finely diced
  • 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • 1 can (6 ounces) tomato paste
  • 1 can (28 ounces) diced fire-roasted tomatoes, undrained
  • 2 cups low sodium beef broth (or 1 cup beer + 1 cup beef broth)
  • 1 bay leaf

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat.
  2. Brown the ground beef, seasoning with salt and pepper, cooking until no longer pink.
  3. Add diced onion, bell pepper, and minced garlic; cook until softened.
  4. Stir in chili powder, cumin, oregano, and smoked paprika.
  5. Mix in tomato paste; cook for 3 minutes.
  6. Pour in diced tomatoes and beef broth; scrape bottom of pot to combine.
  7. Add bay leaf; bring to simmer and cook for 25-30 minutes.
  8. Discard the bay leaf; adjust seasoning as needed before serving.
