  • 2 (15 oz) cans great northern beans, drained and rinsed
  • 1 cup corn (frozen or fresh)
  • 2 heaping cups cooked shredded chicken (rotisserie or leftover)
  • 1 cup sour cream or plain Greek yogurt

Instructions

  1. In a large pot over medium-high heat, heat olive oil. Sauté the chopped onion for about 3–5 minutes until softened; add minced garlic and cook for another 30 seconds.
  2. Stir in chicken broth and diced green chilies, followed by cumin, cayenne pepper, oregano, paprika, lime juice, salt, and pepper.
  3. Drain and rinse the great northern beans; blend one ladleful with a splash of broth until smooth for a creamier texture if desired.
  4. Add both pureed and whole beans along with corn to the pot. Bring to a simmer and cook uncovered for about 15 to 30 minutes.
  5. Remove from heat and stir in sour cream (or Greek yogurt) along with shredded chicken until well combined. Serve hot with your choice of toppings.
