  • 3 sticks unsalted butter (softened)
  • 3 cups sugar
  • 5 large eggs (room temperature)
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 cup whole milk
  • 2 teaspoons vanilla extract
  • 5 tablespoons unsweetened cocoa powder
  • 5 tablespoons HOT water
  • 4 oz semi-sweet or dark chocolate
  • 3 oz heavy cream

Instructions

  1. Preheat oven to 325°F (163°C). Grease and flour a tube pan.
  2. Mix cocoa powder with HOT water in a small bowl until smooth; set aside.
  3. Whisk flour and baking powder in another bowl; set aside.
  4. In a stand mixer, cream softened butter until smooth. Gradually add sugar and mix until light and fluffy.
  5. Add eggs one by one, mixing until combined after each addition.
  6. Alternate adding the flour mixture and milk mixed with vanilla extract to the batter, starting and ending with flour. Mix until just combined.
  7. Divide the batter into three bowls: leave one plain, mix cocoa mixture into another for chocolate batter, and keep the third as vanilla.
  8. Pour batters into prepared pan in layers. Swirl gently with a knife if desired.
  9. Bake for approximately 65 minutes or until a toothpick inserted comes out clean. Let cool before slicing.
