- 1 cup salted butter (room temperature)
- 1 cup powdered sugar
- 2 cups all-purpose flour
- 1 teaspoon vanilla extract
- 6 tablespoons salted butter (for caramel)
- ⅛ teaspoon salt
- ½ cup light corn syrup
- 1 cup granulated sugar
- 1 cup heavy whipping cream (divided)
- 1 ¼ cups milk or dark chocolate
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together butter and powdered sugar until light and fluffy. Gradually add flour and vanilla extract; mix until combined. Press mixture into the bottom of a baking pan and bake for 20 minutes until lightly golden.
- For the caramel layer, melt butter in a saucepan. Stir in salt, corn syrup, and sugar; bring to a gentle boil while stirring. Add half the cream, stir until combined, then remove from heat and stir in remaining cream and vanilla.
- Pour caramel over baked shortbread base; let cool at room temperature for about an hour before refrigerating until set.
- Melt chocolate with remaining cream until smooth; spread over cooled caramel layer.
- Chill again until set before cutting into squares.
