- 400ml dairy-free milk (room temperature)
- 50g caster sugar
- 1 pack active dry yeast (7g)
- 500g plain flour
- Zest from 2 lemons
- 80g lemon juice (fresh)
- 125g coconut milk (cream only)
- 125g caster sugar (for filling)
- Renshaw Lemon Icing
Instructions
- Melt dairy-free butter in a mixing bowl, then stir in dairy-free milk and sugar until dissolved.
- Sprinkle yeast over the mixture; let sit for about 5 minutes until bubbly.
- Gradually mix in flour and lemon zest to form a soft dough; knead on a floured surface for 5 minutes.
- For the lemon curd, whisk together lemon juice, coconut milk cream, caster sugar, cornflour, and optional turmeric in a saucepan over medium heat until thickened.
- Allow dough to rise in a warm place for 30 minutes until doubled in size; then roll out to form a rectangle.
- Spread lemon curd over the dough, roll tightly into a log, cut into pieces, and place on a lined baking tray.
- Let rolls rise for another 15 minutes before baking at 180°C (350°F) for about 20-25 minutes until golden brown.
- Once cooled slightly, drizzle with Renshaw Lemon Icing and garnish with fresh zest.
