- 2 large tortillas (whole wheat or gluten-free)
- 2 ripe avocados
- 1/2 cup rinsed black beans
- 1/4 cup corn
- 2 tablespoons diced red onion
- Juice of 1/2 lime
- 1 garlic clove (minced)
- 1 teaspoon cumin
- 1/8 teaspoon crushed red pepper
- Handful chopped cilantro
- Sea salt and cracked pepper to taste
- Olive oil
Instructions
- Mash avocados in a mixing bowl; add garlic, lime juice, salt, and crushed red pepper. Mix well.
- Stir in black beans, corn, red onion, and cilantro.
- Heat olive oil in a skillet over medium heat. Spoon half the avocado mixture onto one half of a tortilla and fold it over.
- Cook the folded quesadilla in the skillet until golden brown (about 3-4 minutes). Flip and cook the other side for another 3-4 minutes.
- Cut into wedges and serve immediately.
