  • 46 gluten-free tortillas
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 large eggplant (cubed)
  • 6 oz fresh spinach (roughly chopped)
  • Vegan cheese sauce (or store-bought vegan cheese)

Instructions

  1. Heat oil in a non-stick skillet over medium heat. Sauté diced onion until translucent.
  2. Add cubed eggplant, minced garlic, balsamic vinegar, soy sauce, red wine, and spices; cover and cook for 12-15 minutes until eggplant is soft.
  3. Stir in chopped spinach and cook until wilted. Remove from heat.
  4. In another skillet, place a tortilla and add filling and vegan cheese on one half. Fold over.
  5. Cook each quesadilla for 2-3 minutes per side until golden brown.
  6. Cut into quarters and serve hot.
