  • 6 strips bacon, chopped small
  • 1 small onion, finely diced
  • 2 (28 oz) cans original baked beans (do not drain)
  • 1/2 cup BBQ sauce
  • 1/4 cup brown sugar
  • 1 tablespoon apple cider vinegar (or white vinegar)
  • 1 tablespoon Dijon mustard
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 9×9-inch baking dish with cooking spray.
  2. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove with a slotted spoon and drain on paper towels.
  3. Sauté the diced onion in the remaining bacon fat until softened; remove and drain.
  4. In a mixing bowl, combine baked beans, cooked bacon, sautéed onions, BBQ sauce, brown sugar, vinegar, and mustard. Stir until well mixed.
  5. Pour the mixture into the prepared baking dish and bake uncovered for 1 hour, stirring halfway through.
