Ingredients
- 2 lbs Yukon Gold or Russet potatoes, thinly sliced
- 1/4 cup balsamic vinegar
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C) and grease a round baking dish.
- In a mixing bowl, whisk together balsamic vinegar, olive oil, garlic, thyme, salt, and pepper.
- Layer half of the potato slices in the baking dish. Drizzle half of the glaze over them.
- Repeat with remaining potatoes and glaze; press down gently.
- Cover with foil and bake for 45 minutes.
- Remove foil; sprinkle with Parmesan if desired and bake uncovered for another 15-20 minutes until crispy.
- Let cool for 5 minutes before slicing and serving.
