  • 12 jumbo pasta shells
  • 1½ cups ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • ½ cup parmesan cheese, grated
  • 1 large egg
  • 1 cup fresh spinach, chopped
  • 2 cups marinara sauce
  • Olive oil, garlic, salt, and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta shells in salted boiling water until al dente; drain and let cool.
  3. In a skillet, sauté minced garlic in olive oil; add spinach until wilted.
  4. In a mixing bowl, combine ricotta, mozzarella, parmesan, egg, sautéed spinach, salt, and pepper.
  5. Spread marinara sauce in a baking dish; stuff each shell with the filling and arrange in the dish.
  6. Top with remaining marinara sauce and extra mozzarella cheese.
  7. Cover with foil and bake for 25 minutes; remove foil and bake an additional 10 minutes until bubbly.
