  • ⅓ cup almond flour
  • ¼ cup fresh parsley
  • 2 tsp fresh dill
  • 3 cloves garlic
  • ¼ cup feta cheese
  • 1 cup orzo pasta
  • Juice of 1 lemon
  • Extra virgin olive oil

Instructions

  1. In a mixing bowl, combine ground chicken, almond flour, parsley, dill, minced garlic, feta cheese, onion powder, oregano, cumin, salt, pepper, lemon zest, and olive oil. Mix gently until combined.
  2. Form the mixture into 1½ to 2-inch meatballs and sprinkle with salt.
  3. Heat olive oil in a skillet over medium heat. Sear the meatballs for 3–4 minutes until browned; cover and cook for another 5–6 minutes until cooked through.
  4. In the same skillet, bring chicken broth to a boil and add orzo pasta. Cook for about 8–10 minutes until tender.
  5. Stir in lemon juice and olive oil to the cooked orzo, then serve topped with meatballs and crumbled feta cheese.
