Instructions

  2. In a large bowl, whisk together granulated sugar, melted vegan butter, dairy-free yogurt, vanilla extract, and almond extract until smooth.
  3. Add ground almonds, flour, baking powder, baking soda, and sea salt to the mixture. Pour in the vegan buttermilk gradually while mixing until fully combined.
  4. Divide the batter between the prepared pans and bake for 40–42 minutes or until a toothpick comes out clean.
  5. Cool in pans for 10 minutes before transferring to a cooling rack. Once cooled, slice each layer in half for four layers total.
  6. Make the vegan cream cheese frosting as per your preferred recipe or use store-bought.
  7. Assemble by layering frosting and raspberry jam between each cake layer. Finish with frosting on top and decorate with raspberries and crushed almonds.
