Ingredients

Scale
  • 4 (6 oz) salmon fillets
  • Kosher salt
  • Freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon butter
  • 3 garlic cloves, minced
  • 1 tablespoon all-purpose flour
  • 1 1/4 cups heavy cream
  • Juice and zest of 1 lemon
  • 2 tablespoons chopped fresh dill

Instructions

  1. Pat salmon fillets dry and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear salmon skin-side up for 5 minutes until golden, then flip and cook skin-side down for another 5 minutes.
  3. Remove salmon and lower heat to medium-low. Add butter; sauté garlic until fragrant.
  4. Stir in flour to form a roux, then gradually whisk in heavy cream until thickened (about 3–4 minutes). Add lemon juice, zest, and dill; adjust seasoning.
  5. Return salmon to skillet, spoon sauce over it, and simmer for an additional 2 minutes.
  6. Serve hot, garnished with additional dill if desired.
