  • 2 tablespoons granulated sugar
  • 6 tablespoons unsalted butter (melted)
  • ½ cup vegetable oil (such as grapeseed)
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup bittersweet chocolate chips
  • 2 heaping cups mini marshmallows (about 3.5 ounces)

Instructions

  1. Preheat oven to 350°F and prepare an 8×8 inch baking pan with nonstick spray and parchment paper.
  2. In a food processor, blend graham crackers and sugar into fine crumbs. Mix in melted butter until evenly coated.
  3. Press the graham cracker mixture into the bottom of the prepared pan and bake for 15-20 minutes until golden.
  4. In a bowl, whisk together vegetable oil, sugar, eggs, and vanilla extract; then mix in cocoa powder, flour, salt, and baking powder until combined.
  5. Fold in chocolate chips and pour the batter over the cooled crust. Bake for 30-40 minutes until set.
  6. Broil mini marshmallows on top for about 2 minutes until golden brown.
  7. Allow to cool for at least 30 minutes before cutting.
