  • 2 tablespoons granulated sugar
  • 6 tablespoons unsalted butter (melted)
  • ½ cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup bittersweet chocolate chips
  • 2 heaping cups mini marshmallows (about 3.5 ounces)

Instructions

  1. Preheat oven to 350°F. Prepare an 8×8 inch baking pan by greasing and lining it with parchment paper.
  2. In a food processor, blend graham crackers and sugar to fine crumbs. Mix in melted butter until coated; press into the bottom of the pan.
  3. Bake crust for 15-20 minutes until golden brown. Let cool slightly.
  4. In a bowl, whisk together vegetable oil, sugar, eggs, and vanilla. Add cocoa powder, flour, salt, and baking powder; mix until smooth. Fold in chocolate chips.
  5. Pour brownie batter over the cooled crust; spread evenly.
  6. Bake for 30-40 minutes until set and the middle does not jiggle.
  7. Top with mini marshmallows and broil for about 2 minutes until toasted—watch closely!
  8. Let cool for at least 30 minutes before slicing.
