- 1 pound lean ground beef
- 15 ounces canned black beans (drained and rinsed)
- 8 ounces canned corn (drained)
- 16 ounces Catalina dressing
- 2 cups shredded Fiesta blend cheese
- 9 ounces Nacho Cheese Doritos (crushed)
- 2 cups halved cherry tomatoes
- ¼ cup chopped cilantro
Instructions
- Cook rotini in boiling water until al dente. Drain and rinse with cold water.
- Brown ground beef in a skillet over medium heat. Drain excess grease, add taco seasoning and water; cook until liquid evaporates.
- In a large bowl, combine cooked pasta, beef, black beans, corn, cheese, and tomatoes; mix well.
- Whisk together Catalina dressing and sour cream; pour over salad mixture and stir gently to coat.
