  • 1 pound lean ground beef
  • 15 ounces canned black beans (drained and rinsed)
  • 8 ounces canned corn (drained)
  • 16 ounces Catalina dressing
  • 2 cups shredded Fiesta blend cheese
  • 9 ounces Nacho Cheese Doritos (crushed)
  • 2 cups halved cherry tomatoes
  • ¼ cup chopped cilantro

Instructions

  1. Cook rotini in boiling water until al dente. Drain and rinse with cold water.
  2. Brown ground beef in a skillet over medium heat. Drain excess grease, add taco seasoning and water; cook until liquid evaporates.
  3. In a large bowl, combine cooked pasta, beef, black beans, corn, cheese, and tomatoes; mix well.
  4. Whisk together Catalina dressing and sour cream; pour over salad mixture and stir gently to coat.
  5. If serving immediately, fold in crushed Doritos and lettuce; garnish with cilantro.
